“Bulgur”: Turkey’s Yellow Oil

Industry sources forecast that bulgur, a valuable product as valuable as oil for Turkey, will become an important export item in the years ahead. Consumption and export of bulgur have risen remarkably. Having higher nutritional factor, bulgur is a major ingredient among the healthiest foodstuff against obesity.

Enver Cokay, chairman of Nefis Bulgur company has pointed out the growing popularity of the product both in Turkey and in the world. He said, “Backed bay smart promotional efforts, awareness and consumption of bulgur have risen recently. The product was included in the standard aid packages prepared by UN to be distributed in Africa and in other regions. Since it has un-saturated oil but no cholesterol and it is good for heart and vein diseases. Reach in mineral and cellulose it facilitates the intestinal absorption including radioactive ingredients thus it is stocked for nuclear war and hazards for military and peaceful purposes.

It is advised for childbearing women because it contains folic acid. It is good for brain functions of kids. Since it has lower glycemic index it controls glucose level for diabetes.”

Dealing with bulgur production since 1950 as a family business Enver Cokay informed about exports of bulgur. He said, “Earlier we have been exporting bulgur to limited markets such as Syria and some other Arab countries, now our target markets are Russia, China, Africa and Middle East countries.

In the fifties it was produced by traditional methods, however it has been produced for 15 to 20 years on modern machinery hygienically. Gaziantep has the highest potential for bulgur production in Turkey, many factories in the city produces for export markets. Promotion of bulgur based traditional and regional meals in touristic facilities have increased demand for bulgur. More than a hundred different dishes and soups are made of bulgur.”

He also said, “Bulgur may become the number one food product in the 21st century. The special promotional organization managed by food producers aimed to increase the awareness and the consumption of bulgur. In the years ahead, we will get more demand for this food.”
